During the winter the laying will slow down, or even stop, as the drop in daylight signals their system to focus on surviving the winter rather than developing eggs. Duck eggs are prized by chefs and bakers as their large, rich yolk is extremely tasty and makes baked goods super fluffy! Our goose will lay two dozen or so eggs in the late winter/early spring and then will stop for the remainder of the season. We use plastic tubing and vacuum pumps to collect the sap from our maple trees into collection tanks where we process the sap before boiling over our wood-fired evaporator.
